I wrote these articles over the course of a little over four years for the Sevananda Natural Foods Co-op’s newsletter, Co-options. They started off as Vegan Baking 101, since that’s what I was doing at the time – I was a vegan pastry chef and vegan baking is like the Holy Grail for vegan cooks. People asked for more general vegan cooking advice, so the column morphed into Vegan 101, and later Cheap and Chic Vegan Cuisine, and the Homesick Vegan.
Each article has a text portion that talks about either the science behind why we do what we do in the kitchen, or a little about the place the recipes came from, or ideas for veganizing your own recipes, etc. I’m a natural teacher, so I want to make sure that people get the Why behind the How.
